Research has shown that kojic acid, a by-product of the sake manufacturing process, has significant brightening properties. While the ingredient is known to be effective, it is also very difficult to use due to its extreme sensitivity to sunlight and air. For this reason, it is often replaced with kojic dipalmitate, a substitute that is both less delicate and less effective.
